DUSTY DINNERS WITH HELEN GRAHAM & NATOORA
w/ talk on soil health & biodiversity
For the next Dusty Dinners we’re opening up the kitchen to two masters of vegetables - Helen Graham and flavour-first suppliers Natoora. The duo will be cooking up a supreme veg banquet that focuses on seasonal veg, zero waist, and BIG flavours.
Helen (previous exec chef at Bubala) focuses on sustainability, closed-loop menus, and putting the whole vegetable center stage. Welcome to the DK fam Helen [handshake emoji]
She’ll be bringing her mates from Natoora to join our party. Natoora exists to fix the food system. They supply UK, France and Denmark with nutritionally-dense groceries that bring back the joy of food. Biting into one of their peaches is a religious experience, TRUST.
Soil and its role in the planet’s future is Spring’s hottest topic (@somerset house 👀), so we’re gonna be nourishing your mind on the night too. Not only are Natoora supplying the menu’s veg but Paddy, their Head of Sourcing, will be giving a chat about biodiversity and regenerative soil and how this affects us, our produce, and the planet.

First Dusty Dinners of the year. We're opening up the kitchen and saluting our first guest...Willy’s Pies!
The Willy’s Pie team have been grafting away in Hackney since 2020 and they are top of their game - can you get bigger than selling pies at the Emirates? They stand for quality. A cheap pie looks like it's stuffed with dog food because, well, it sort of is. A good pie is about good produce, treated with respect, and cooked with care. The result is top notch and we've eaten enough of them to know.
They've knocked together this unbelievable menu, we’re going to make some really special pastry, and it just all happens to be on the most romantic night of the year, Valentines day!
